About Truffle Infused Oils 

The main truffle varieties that dominate the global truffle world are the Perigord French black winter truffle (Tuber melanosporum), the Italian White Truffle (Tuber magnatum) and the Burgundy or Summer truffle (Tuber aestivum). Our range of infused oils includes all three varieties so you're sure to find an oil that suits your taste and budget.

Most truffle oils are not made directly from truffles, but instead use manufactured aromatic compounds which mimic the truffle aroma, just as vanilla essence mimics the fresh bean. Adding fresh truffle to a fine olive oil risks botulism, and has a very short shelf life of just a few days. 

Flavour specialists have developed a range of essences, and each brand is a little different- that’s why we feature fourteen different oils from around the world. The main flavour compound used in most oils is 2,4-dithiapentane (a prominent aroma active compound found in truffles) with the oil base. 

Truffle oil can be produced using any oil, such as neutral flavoured canola or grapeseed oils, but most oil makers prefer the more robust extra virgin olive oils that complement the earthy, savoury aromas of the truffle.
